Recently I came across this amazing muesli from 'My new roots'. I tweaked it to my liking, adding and taking away ingredients till I found my favourite morning muesli to wake up to! Mmmm morning chocolate!
This little breakfast treat has a delicious chocolate taste from the cacao and is sweetened with maple syrup and coconut sugar. Although it's high in sweetness, it's probably similar to your processed sugar-laden store-bought varieties. This muesli, however, is made with the goodness of organic oats and buckwheat. Oats are incredibly nutritious and loaded with important vitamins and minerals, while buckwheat is high in protein, essential amino acids and magnesium. I also added pumpkin seeds and sunflower seeds to the mix to get a bit of extra goodness and raspberries for a small burst of fruity tartness.
You really can change this recipe to suit your own tastes. Change the hazelnuts for any nut of your choice and change the raspberries for strawberries or blueberries. Get creative and have a go. But be warned, it is dangerously delicious!
Here's the recipe:
3 cups rolled oats
1 cup buckwheat
1 1/2 cups coconut (desiccated or flakes)
1 cup hazelnuts
1/4 cup chia seeds
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup coconut sugar
1/2 cup coconut oil
1/3 cup maple syrup
1/2 cup cacao powder
Mix all dry ingredients together and place in an electric frypan to toast.
Gently heat coconut oil, maple syrup and cacao - stir and pour over dry ingredients.
Once nicely toasted, cool and put in a glass container - and enjoy!
